How early can i chop veggies?
When you ask how early you "can" chop them, it's a different answer then how early you "should" chop them. You "could" chop them a few days ahead of time and place them in a bowl with plastic wrap. However, you "shouldn't" chop them any more than day ahead if you are concerned about minimal flavor loss.

Reply:You should probably cut them like that day or the day before would be good!
Reply:At restaurants they keep chopped vegetables in ice water in the fridge. You will lose some flavour, but if prep-time of your pizza is of concern, this is the way to prepare ahead of time.
